By mistake, I created the best chocolate chip cookies I ever ate! I started out just wanting to inject as much nutrition into the cookies as possible, as a mother trying to keep her kids healthy. So I added some flaxseed meal to a standard recipe. I don’t know why, but I think adding flaxseed meal makes them taste better, in addition to making them more nutritious! The other thing I did was sprinkle sea salt on top of each cookie before baking. Getting a taste of salt in contrast to the sweetness of the sugar and chocolate is a gift to your tastebuds, and will make you think these are the best chocolate chip cookies ever!

High quality ingredients make a difference

Finally, high quality ingredients make a big difference in the resulting taste of any recipe. I’ve discovered that using premium chocolate brand chocolate chips creates a noticeable difference. Guittard and Ghiradelli are brands that I usually choose from my grocery store. But most important is the flour. Choose organic flour to be kindest to the Earth–and kindest to your health. Keep those pesticides out of the soil and out of your body! And if you have access to a flour that is grown or milled near where you live, choose it for your baked goods.

Keys to these cookies tasting better than usual: flaxseed meal, flour grown with the Earth and our health in mind, high quality chocolate chips and sea salt sprinkled on top!

Ingredients

  • 2 sticks unsalted butter, softened

  • ¾ cup sugar

  • ¾ cup dark brown sugar

  • 2 1/4 cups organic flour*

  • 1 tsp. baking soda

  • ½ tsp sea salt

  • ¼ cup flaxseed meal

  • 2 tsp vanilla

  • 2 eggs

  • 1 cup semi-sweet or bittersweet chocolate chips

  • freshly ground sea salt to sprinkle on cookies before baking

Directions

  • Preheat convection oven to 350 degrees or regular oven to 375 degrees.  Prepare 3 baking sheets by lining them with parchment paper.
  • Cream butter and both kinds of sugar together in a large mixing bowl. 
  • Add vanilla, then eggs, one at a time. 
  • Stir together flours, baking soda, sea salt, and flaxseed meal in a small bowl, then gradually mix the blended dry ingredients into the batter.
  • Add chocolate chips.  Blend well. 
  • Drop spoonfuls of batter onto parchment paper-lined baking sheets.  Grind just a tiny bit of Himalayan sea salt over the tops of the cookies. 
  • Bake in convection oven, if possible, at 350 degrees, otherwise a regular oven at 375 degrees, for 9-11 minutes, until just beginning to look dry and golden.  Slide parchment paper from cookie sheet to wire rack to cool cookies.

Notes

  • *About the flour: You can use 1 cup all-purpose flour and 1 ¼ cup whole wheat flour or use a blend of stone ground whole wheat and wheat flours–organically grown and harvested for environmental sustainability! If possible, source your flour from a place close to where you live, to reduce transportation emissions associated with getting it from farm to your house.
